With the increase of meat production, more and more antioxidants are used in meat processing. In addition to microorganism and protease, fat oxidation is also a major cause of meat deterioration in the course of storage and shipment.

Natural antioxidants under research and in use include extracts from flavors and fragrances, extracts from medical herbs, phytic acid, protein, enzyme, vitamins, natural flavone, tea polyphenols, etc. Natural flavone and tea polyphenols are too expensive to be used and proteins and enzyme are subject to limitation in high-temperature meat products. Natural antioxidants fit for industrial meat processing are natural Vitamin E, liquorice, lecithin, etc. With the increase of natural antioxidant varieties and with the reduction of their production cost, natural antioxidants are expected to replace synthetic antioxidants gradually.
