Biological preservative started with Nisin in China more than ten years ago. The world?s annual demand for Nisin is 120 MT, 90% of which is produced in China and Denmark. Yinxiang Co. Ltd., located in Zhejiang, started Nisin production in 2005 and its annual production is 150 MT. The company exports 70% of its production to western countries.

In a short time of five years, five Natamycin producers have emerged. ?-Polylysine production experienced an even faster development.

Biological preservative application enjoyed a rapid growth in 2006, especially the application of Nisin in meat and dairy production. This was accredited to two factors: First, Nisin priced has slumped over the last few years amid an increasing supply. Attracted by high profit in Nisin production, Nisin producers have increased to about 8, resulting in a hot competition. Second, Nisin producers have developed more than ten kinds of preparation that facilitates its application.
