American meat producers usually restrict the use of soybean protein to 1% as they are concerned about consumers’ repulsion at higher proportion of soybean protein in meat products. But in China, to secure a high profit, ham sausage producers use soybean protein at a proportion of 2 ~ 6% to replace lean pork. As a result, lean pork content is below 30% in ham sausages in China.
